Joy of the ridged griddle

Months and months ago, on an impulse in the supermarket, I bought an object rather like this. I've been using it to cook fish on top of the stove, roughly once a month (maybe not even as often as that). And then yesterday, it suddenly occurred to me - why not cook steaks on it?

Yum.

And then today I thought, why not cook the lamb fillets on it?

Yum yum yum.

It has been a recurring minor irritation that our fitted kitchen, done three years ago, had no proper grilling arrangements. But now I think that gap in my life has been filled.

I have a splendid old 12" Wagner cast-iron skillet which is (A) brilliant for cooking steaks on and (B) is a potentially lethal weapon. No home is complete without such an infernal (almost literally, given the heat it retains!) device.

We've had one of those for years, and it's the only thing I'd ever think of using for steaks, chops and so on. Far better than an overhead grill. It's also excellent for chargrilled veg, should you be partial to that.

Griddle-pans are awesome (and healthy...). My favorite trick with them - idea stolen from Nigel Slater - is to do boned, often marinated, chicken thighs on them. All the fat bubbles out and the skin goes crispy. (I believe they're great for doing duck breasts, for the same reason, but I'm not much of a duck person.)

Yeah, but it's much quicker and easier to clean than a traditional grill pan!

I love those, although I don't have one yet. I really should get one. It's healthy and meat and fish come out great!

I thought about buying one of these a few weeks ago but resisted. I can now see I was wrong to do so.
